v1.8.0: Update all documentation to match current state

Browse Source 
Fixed 19 outdated occurrences across 7 files:
- public/index.html: 27→30 endpoints (6 occurrences)
- public/manifest.json: 27→30 endpoints
- README.md: 27→30 and 24→30 endpoints (7 occurrences)
- docs/index.md: 27→30 endpoints
- docs/architecture.md: 27→30 endpoints
- package.json: axios ^1.7.0→^1.8.0
- CHANGELOG.md: Added documentation update entry
