Fix character/staff queries — remove dateOfDeath, fix MediaEdge role field

- Character: removed dateOfDeath (not in AniList schema), changed role→characterRole
- Staff: removed dateOfDeath, removed invalid role field from staffMedia edges
- Fixes 400 errors on /api/character/:id and /api/staff/:id
